In addition to the other great items for Katherine’s birthday dinner, Kelly, from Pink Champagne Paper Co, created these adorable cupcake toppers. Go here to see the rest of the invitation suite Kelly did for the birthday dinner. One of our favorite parts of birthdays, (and any day, really!), is dessert. Whether it’s a chocolate chip cookie with coffee in the morning, a handful of m&ms during the day, or ice cream after dinner, we try not to let a day pass without eating something sweet. One of our favorites is carrot cake. Why not? It’s healthy for you, right? At least it has a vegetable in it, and this recipe has fresh ginger, another bonus! This was the first time we made our favorite carrot cake recipe into cupcakes instead of a cake, and we were very happy with the result. They looked so cute and were so easy to serve. To accompany the cupcakes, we opted for a Pomegranate Gelato, which comes out a soft, pretty pink – perfect for our color scheme. The combination was delicious together!
