With the first day of fall coming tomorrow, what better way to celebrate than a carrot cake!  This carrot cake with maple-cream cheese icing is our favorite carrot cake recipe.  We made this one to celebrate two family birthdays last weekend and it was a hit!  With the spice of the cake, it definitely starts to feel/taste like fall.  We sure wish the weather would cooperate!  Happy fall y’all!
