Remember our Twist on Thanksgiving post? Well, the pomegranate margaritas were so good, we couldn’t put them down to stop and take a picture! They have just the right amount of pomegranate flavor without being overly sweet, and enough tequila that you know it’s there. They are festive, fun, just plain yummy, & a great addition to your holiday cocktail repertoire!
Pomegranate Margarita
1 ounce Cointreau
4 ounces Tequila
3 ounces pomegranate juice
2 ounces lime juice
coarse salt for the rim
lime wedges & pomegranate arils for garnish
Run a lime wedge around the rim of your glass and dip in coarse salt. In a cocktail shaker, combine cointreau, tequila, pomegranate juice (we like POM), and lime juice. Fill with ice & shake until the cocktail shaker is quite cold. Fill the glass with ice and pour the margarita over. Garnish with some pomegranate arils and lime wedges. If we are making more than one – and we usually are! – we like to put the margarita ingredients in a pitcher and stir over ice, then pour into the prepared glasses and add garnish.
