Just two days stand between now and Thanksgiving! We love this holiday; getting to be with friends and family, while watching football (Go Cowboys!), cooking up a storm, and best of all – thanking the good Lord for our blessings. Thanksgiving food is always special and delicious, and while some enjoy it only on Turkey Day, others can eat it until it’s gone and still wish for more. We love turkey dinner on Thanksgiving, but we’re usually ready for a change by the weekend. Hence, our Twist on Thanksgiving!
The Twist on Thanksgiving started a few years ago in our family and has become a favorite tradition ever since. The whole concept of the twist is to use thanksgiving leftovers, or traditional ingredients, in creative ways. Our first year, we had turkey chili (which is still a favorite), jalapeño corn bread, and pumpkin ice cream for dessert. We did part of our Twist early this year to give you a couple of ideas of how to repurpose some of your leftovers and try out these yummy recipes. Turkey Enchiladas (call for chicken, but we use turkey instead) and Spicy Sweet Potatoes – a great combination!
